Abstract Symptoms of oxygen deficiency and variations in dissolved‐oxygen level have been described in some typical aerobic fermentations. In bacterial fermentations, dissolved‐oxygen levels were almost the same in different parts of the fermentor. As a result, good correlations between apparent and true critical oxygen concentrations were obtained. Poor correlations were obtained in mould fermentations.
